Will My Taste of Matol/ Km Change?
by Michael P. Ciell, R. Ph. with John D. Young, MD

I just love to watch people experiencing the taste of Matol/ Km for the first time! They usually screw their faces up with eyes closed tightly and give their head a violent shake. Then they say something like: "What did I ever do to you... etc." Only kidding, it's never really that bad but let's look at what is really going on here. Remembering the concepts of tolerance and sensitivity, we should realize that it is the bitter taste that is the most pronounced. We do not usually eat bitter foods these days and thus we are very sensitive to this taste. Generally eating a lot of salt and sugar in our foods, these very subtle tastes in Matol/ Km are not discerned by our desensitized taste buds and it is the bitter taste that "overrides" all others. Veteran Matol/ Km users have told me that the "rookies" will usually ask you (by the time they start on their second or third bottle): "Hey, did they change the formula of this stuff? It's not as bad as it was before!" They were right. People have said this to me. But what is really going on is this: Matol/Km didn't change, your tastes have changed. If you are on the Matol Diet, you have been avoiding sugar, hence your perception of sweetness is growing keener (try sipping a Coke - it will seem like you are drinking syrup). You're getting more accustomed to the important bitter taste, and the initial side effects are becoming tolerable. Basically your tastes are becoming normal and it is very important for you to be aware of this.
